Snow Biscuit Chickies for Easter
Granny's Snow Biscuits, redone for Easter *guest post by JD Provence Ingredients: Corn Kernels: for "chickie lips" Peppercorns: "for chickie eyes" 1 1/2 cups Warm Water *temp your yeast needs to activate 1/2 cup Sugar 2 Tbsp Yeast 4 cups All Purpose Flour 1 tsp Salt 3 Tbsp Oil *your choice Directions: Combine water, sugar and yeast in large mixing bowl, and let sit 5 minutes. Mix flour and salt together, in separate bowl. Add oil to yeast/water mix and stir. Add in the flour/salt mixture to the water mixture, until dough ball forms. Place dough ball in oiled bowl and cover for about 1 hour, until it doubles in size. Place dough ball on floured work surface and pat down and roll out, to about 3/8" thick, and cut biscuits. I usually cut mine into squares, because there is less trimmed dough left, that has to be reworked, rolled, and re-cut. Place cut biscuits on sheet pans, cover to prevent drying, and let rise 45 minutes to 1 hour. Preheat oven to 350. Cook biscuits about 15 minutes, or until golden brown. Remove from pans and let cool. This recipe makes about 35 - 3" square biscuits, but recipe can easily be halved. Lots and lots of dill coming in my garden - I think it's my gardens way of making up for getting annihilated last year from rain, snow, hail and earwigs (yuck!) My favorite part of dill isn't using the dill weed but, waiting for the dill seeds to plump up, turn brown and shake off! I really liken fresh dill seeds to a similar taste - rye seeds. Last year I had to settle for buying dill seed from a store and let me say - there is NO comparison! Fresh is so much MORE tasty and full of flavor! In this recipe I used both dill weed and seed. it's a nice compliment to a fish dinner too... In this recipe - I use my 'Homemade Baking Mix' (link in recipe below) If you cannot grow or find fresh dill weed/seed in the stores - check with your local Farmers Market - a lot of purveyors will have it for you to buy... ~Enjoy! Dilly Drop Biscuits Ingredients: 2 1/4 Cups of Homemade Baking Mix 2/3 cup of milk 1/2 cup cheddar cheese, shredded 1 heaping Tbs fresh dill seeds 1/4 cup fresh dill weed, chopped 1/2 tsp parsley flakes, crushed 1/4 tsp garlic powder Directions: Preheat oven to 450 F. Combine all ingredients in a mixing bowl with a large spoon, until a raggy dough forms, drop by spoonfuls onto parchment lined baking sheet and bake until golden brown - approx 8 mins. Brush with melted butter and bake an additional 2 minutes, remove from oven and serve warm. Makes 9 Biscuits. #recipe #baking #biscuits I'm not sure but, I can't really see John Wayne eating this casserole. Maybe if it was cooked in a skillet over an open flame on the open range...and crispy hash browns replaced the 'bisquick mix' ...I think maybe he'd add in some more spicy peppers and shredded beef instead of ground beef. Who knows... Dare I even think maybe the original John Wayne casserole involved eggs then what ingredients all this casserole takes on? In any case, this casserole feeds a lot of hungry mouths! I do think that the spice mix is decent but, you need to taste as you cook and make sure to adjust taste as you go so that you don't get a casserole that falls flat on flavor... I will admit that I like the 'leftovers' from this too - reheating in a microwave is a snap and still retains flavor nicely. ~Enjoy! Diane
John Wayne Casserole Ingredients: 1.5 lbs lean ground beef 2 Tbsp chili powder 1/2 tsp garlic powder 1 tsp onion powder 1/2 tsp dried oregano 1 1/2 tsp paprika 1/2 tsp ground cumin 1/2 tsp sea salt 1 tsp black pepper pinch of red pepper flakes and/or pinch of cayenne (optional) 1/3 cup of water ******* 3/4 cup sour cream 2 cups shredded cheddar cheese, *divided 1 onion, diced, *divided ******* 2 cups biscuit mix (Bisquick) 1 cup water 2 roma tomatoes, diced 1 sweet bell pepper, diced (any color) 1 (4 oz) can green chilies (can substitute sliced jalapenos for a spicier kick) Instructions:

you can fold in any berry really...and change up the zest from lemon to orange or even - lime! Blueberry Lemon Biscuits {with vanilla bean glaze} Ingredients: Biscuit Dough 2 cups flour 1 cup cold milk 1⁄3 cup sugar 5 Tablespoons butter 4 teaspoons baking powder 1 teaspoon salt 4-6 ounces blueberries 2 teaspoons lemon zest Glaze 1 cup powdered sugar 1⁄8 cup water 1 teaspoon vanilla bean paste 1⁄2 teaspoon lemon juice Directions: Plan Ahead: before baking - place butter in freezer at least 2 hours ahead of making dough. Preheat oven to 450°F Mix salt, sugar, flour, and baking powder in a large bowl. Sift that dry ingredient mix before proceeding to next step. Add cold milk into the sifted dry ingredients and mix. Once the dough begins to form - grate the frozen butter evenly over dough. Fold dough, and knead until all butter is spread evenly throughout dough. Take blueberries and lemon zest and fold into dough gently. With floured hands and a large spoon, drop biscuit sized dough balls into a parchment lined cookie sheet and slightly pat into a biscuit shape. Bake in oven for 9-12 minutes. Melt 1 tablespoon butter in the microwave, and brush tops of finished biscuits. When the biscuits are cooled slightly, mix the glaze ingredients in a bowl, and drizzle over biscuits.
