Diane's Hackney Burger
Ingredients: 1/2 pound 85% ground beef 1/2 pound 93% ground beef 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon black pepper 4 Dark Rye Slices (oblong) Directions: Add all spices to ground beef; lightly knead spices into beef and divide into two (your making two 1/2 pound burgers.) Shape each section into an oblong patty the shape of the bread. Make an indentation in the middle of the oblong patties (a large in width and length indentation - so when beef cooks - the patty stays flat.) Heat some ghee in a non-stick pan large enough to hold both patties. Lay the beef down once pan is hot and do not move patty. Let the beef cook at least 3 minutes before flipping to other side. A "medium" cooked burger will take about 9 minutes *temp meat to ensure doneness. Add cheese slices over the top of patties - turn heat off burner and place lid onto pan; let cheese melt - then serve hot on dark rye. Burger is best served with thinly slices onions and ketchup only. Yield: Two Hackney Burgers

This recipe is for a quick and easy dinner. We like doing this when we don't have access to our outdoor grill but, craving a burger. You can make the hamburger patty as thick or as thin as you want but, if you do go thicker then increase your first 'bake time' accordingly. The second 'bake time' is to melt the cheese, warm up the onion and toast the buns. You can double this recipe completely by using 2 pounds of ground beef and spreading into a 9x13 baking dish. I use two 8x8 baking dishes (one to bake the ground beef and one to finish the recipe.) IF you don't have two equal sized baking dishes, just be extra careful wiping out the dish between the first and second 'bake time". I will admit, these remind me of "Home" and our ole ' White Castle' Burgers!

Diane Easy Cheeseburger Oven Sliders 1 pound of lean ground beef 1/2 tsp garlic powder 1/2 tsp salt 1/4 tsp ground black pepper 1/4 onion, small dice 4-6 slices of cheddar cheese (enough to cover ground beef patties) 6 slider hamburger buns 2 Tbs melted butter sesame seeds, if needed, optional Directions: Preheat oven to 350F.
Makes 6 sliders Always in search of the best burger to make at home - I thought I'd give Ina Garten's recipe a try. I used Angus Beef as it was on sale, and does add a bit more flavor. We grilled the burgers on our Big Green Egg and all I can say is that something magical happened and turned this simple recipe into a great tasting, restaurant quality $12 burger!! My husband and I both agree that this is excellent. I'm so happy that the snow is on its way out over here and we can get back to some serious grilling! ~Enjoy! Diane Ina's Real Hamburgers Recipe Ingredients: 1 pound ground chuck ** (80/20) **this is the key to a great burger, the fat content 1/2 pound ground sirloin ** (85/15) 3/4 tsp kosher salt 1/4 tsp ground black pepper 1 1/2 Tbs steak sauce 3 egg yolks 2 Tbs unsalted butter, cut into 6 pieces. 6 burger buns Directions: Place ground beef in a large bowl. Sprinkle salt & pepper, steak sauce over ground beef. Add egg yolks and with tines of a fork, lightly blend the ingredients without mashing. Using your hands, divide mixture into 6 equal parts. Take one part and shape into circle/patty. make a slight indentation and add 1/6th of the butter, encasing it entirely with meat and forming your final hamburger patty. Repeat with remaining 5 parts of meat mixture. Makes 6 Burgers Recipe Notes: I used Angus Chuck 80/20 & Angus Sirloin 85/15 I used A-1 Thick & Hearty Steak Sauce Try serving with Caramelized Onions, or Grilled Hatch Green Chiles and Cheese.
