JD's Burger Pickles
4 pounds pickling cucumbers, sliced (approx. 1 heaping gallon of slices) Brine: 5 cups water 5 cups vinegar 4 Tbs pickling/canning salt 6 cloves, fresh garlic, peeled and sliced 2 Tbs Peppercorns Add to Each Pint Jar along with cucumber slices: 1/2 tsp Ball Pickling Spice Mix 2-4 cloves, fresh garlic, peeled and scored 2 Jalapeno slices/rings 1/8 tsp Pickle Crisp Directions: Add water, vinegar, pickling/canning salt, garlic, and peppercorns to large pot and bring to full rolling boil. To each prepared, sanitized pint jar, add 1/2 tsp. Ball Pickling Spice Mix , 2 - 4 cloves garlic, and 2 jalapeno rings (optional). Divide cucumber slices between approx. 8 pint jars, add 1/8 tsp. Pickle Crisp, top off with hot brine to 1/2" head-space, wipe rims of jars, secure lids and bands and process in a boiling bath for 10 minutes/pints 15 minutes/quarts or as required for your altitude/elevation. Chunky Mustard Pickles Ingredients 14 cups cubed, seeded, peeled pickling cucumbers 6 cups onions, chopped 1/4 cup pickling/canning salt 3 cups sugar 4 tablespoons Clear-Jel 1/4 cup dry mustard 1 tablespoon ground ginger 1 teaspoon turmeric 1/2 cup water 2 cups white vinegar (I used half cider vinegar half white) 1 red bell pepper, finely chopped and seeded *optional Instructions
Yields: 7 pints *Pickles are best if left to develop for up to 6 weeks for best flavor (but they still do taste pretty good if you can't wait that long!) -a per pint recipe Ingredients: 1 pint small pickling cucumber (approx 3 kirbys) 1 teaspoon dill seed 1 garlic clove 1 sprig dill weed, pretty (optional) 4 coriander seeds 1⁄2 teaspoon mustard seeds 1 small bay leaf 1⁄8 teaspoon hot pepper flakes 1⁄2 cup white vinegar 1⁄2 cup water (I use bottled) 1 1⁄2 teaspoons canning/pickling salt Directions: Wash and scrub cucumbers. Trim a little off the stem end and more off the blossom end (where bitterness can reside). Leave small cucumbers whole, or slice into spears or sandwich slices as desired. All cucumbers in a jar should be similar in size and thickness. Add seasonings, except salt, to 1 pint wide mouthed jar. Pack firmly with cucumbers, leaving a 1/2" head-space. Combine vinegar, water, and salt in a small sauce pan. Heat until boiling. Ladle into jar to cover cucumbers - again, leave a 1/2" head-space. Seal jar with sterilized lid & band, and process in a boiling water bath for 10 minutes (15 minutes for quarts) adjusting for altitude. Wait 4-6 weeks before tasting to allow pickles to cure. Refrigerate after opening. (you will want to scale this recipe up to make a full canner load) YOU CAN ALSO NOT CAN THESE - JUST MAKE UP THE BRINE AND SET JARS IN FRIDGE ONCE COOLED A BIT - LET SIT FOR AT LEAST A WEEK OR MORE FOR ENHANCED FLAVORS Recipe by: Marybelles Polish Dill Pickles ~ at Food.com Photos by: Diane Baker for Canning and Cooking at Home Sweet Pickle Relish Ingredients 2 Qts Pickling Cucs, diced (about 4.5 lbs) 2 cups of chopped onion 2 green bell peppers, chopped 3 red bell peppers, chopped 4 tablespoons of canning/pickling salt For the Syrup: 3 cups of cider vinegar 4 cups of granulated sugar 2 tablespoons of mustard seed 2 tablespoons of celery seed 1/2 teaspoon of turmeric In a large glass or plastic bowl, mix together the cucumbers, onion and peppers; toss to mix well. Add salt, stir, cover and let stand 2-3 hours or stirring occasionally. Drain well, and rinse. In a large pot, mix together the vinegar, sugar, mustard seed, celery seed, and turmeric. Bring to a boil, stirring regularly until sugar is dissolved. Add in the drained vegetables and return to a boil, reduce to medium and simmer for 20 minutes. Use a slotted spoon to transfer relish into sterilized jars and top off with syrup. Seal, refrigerate, or process for canning using 1/4" headspace and water bath can 10 minutes or according to local canning regs. Makes about 6-8 half pints.
