Mini Spiced Apple Tarts
Ingredients: 1/2 box (1 sheet) puff pastry dough, thawed 1 egg 1 tsp water demerara sugar or large granulated sugar, for sprinkling Spiced Apple Mix: 1 Fuji apple, thinly sliced & cored 2 Tbs maple syrup 2 tsp cinnamon 1/2 tsp nutmeg 2 Tbs brown sugar Makes 8 Mini Tarts Directions: Preheat oven to 400. While the pastry dough is thawing, mix together your apple slices with spice mix in a large bowl, toss to coat and set aside. Thaw one sheet of puff pastry dough *takes approx 40 mins from frozen, when defrosted, lay pastry dough on a piece of parchment paper or a lightly floured surface and gently roll out dough to create a smooth, flat, seamless surface. Using a 3 inch cookie/biscuit cutter, cut out as many circles as you can (I get about 4-5 circles from the start) continue gently rolling and cutting circles until all the dough is used up. Lay the cut circles on a baking sheet lined with parchment paper, prick only the centers of each circle all over with a fork - leaving about a 1/2 inch edge of solid dough. Lay spiced apples in the middle of each circle (I stood mine upright a bit, resting against each other - 4 thin slices fit into the center of each of my circles.) Mix the egg and water together in a bowl and Brush the outside solid edges of dough with the beaten egg/water mixture, sprinkle with sugar and Bake at 400 for approx 20 mins or until golden brown. I love nothing better in the morning then a buttery slice of heaven (cinnamon coffee cake) with my first cup of coffee. I usually make sure I have everything ready to go in the morning so I can whip this up and pop it in the oven - the smells are just the perfect 'wake up' call for the rest of the family. This is quick and easy. Enjoy - Diane Cinnamon Coffee Cake Ingredients: 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 6 tablespoons white sugar 1/2 teaspoon salt 1/3 cup shortening 1/2 cup milk 1 egg 1/2 teaspoon vanilla extract 2 tablespoons butter, melted 1/2 cup brown sugar 2 tablespoons all-purpose flour 1/2 teaspoon ground cinnamon Directions: Preheat oven to 425 degrees. Grease and flour a 9 inch square pan. In a large bowl mix together the flour, baking powder, sugar and salt. Cut in the shortening with a pastry blender to the size of small peas. In a separate small bowl, beat the egg well, then stir in the milk and vanilla. Add the egg-milk mixture to the flour mixture all at once. Stir carefully until just blended. Pour batter into prepared pan and spread evenly. Drizzle top with melted butter. In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon. Sprinkle the cinnamon topping onto batter. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Recipe by: Stephanie Photo by: Diane Baker for Canning and Cooking at Home Apple Cinnamon Cake Loaf Ingredients: 1/3 Cup Brown Sugar 1 tsp ground cinnamon 2/3 Cup White Sugar 1/2 Cup butter, softened 2 eggs 1 1/2 tsp vanilla extract 1 1/2 Cups all-purpose flour 1 3/4 tsp baking powder 1/2 Cup Milk 1 apple, peeled and chopped Directions: Makes one 9x5 loaf. Preheat Oven to 350. Grease and flour loaf pan. Mix brown sugar and cinnamon together in a bowl. set aside. Beat white sugar, and butter together in a bowl using mixer until smooth and creamy. Beat in the eggs - one at a time until incorporated, add vanilla extract. Combine flour and baking powder together in a bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into loaf pan and top with half the apples and half the cinnamon/brown sugar mixture. Pour remaining batter into pan and top with remaining apples and brown sugar minture. Lightly pat apples in & swirl brown sugar through apples using a finger or spoon. Bake 30-40 mins until toothpick comes out clean in center. Don't have cinnamon chips? that's ok! you can just increase the ground cinnamon a bit and get the same great taste! drizzle caramel over the top and you'd be singing a happy song for sure! Enjoy! Taste of Cinnamon Cheesecake ************** Graham Cracker Crust 9 inch spring form pan 8 graham crackers, finely crushed (about 1 cup) 3 Tbsp. butter, melted 2 Tbsp. white sugar 1 Tbsp. brown sugar Preheat oven to 325ºF. Crush graham crackers into crumbs, add melted butter and 3 Tbsp. sugar; press onto bottom of 9-inch springform pan. Bake 10 min. **************** Cheesecake Filling 2 pkg. (8 oz. each) cream cheese, softened 1/2 Cup white sugar 1/2 tsp vanilla extract 2 eggs 1 cup cinnamon chips 1 Tbs ground cinnamon Adjust oven to 350ºF. Let crust cool on countertop while you make the filling - raise oven temp to 350. Beat softened cream cheese, sugar, vanilla, eggs and ground cinnamon with mixer until well blended. Fold in cinnamon chips. Pour batter over crust. Bake 50 min. to 1 hour or until center is almost set. and slightly golden. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 2 hours. One of my favorite cookies too - Snickerdoodles!! I'm not sure if it's because of the silly name? or the great taste but, I love this bread! This snickerdoodle bread has sour cream in it which means that it turns out moist. The topping being a sugar and cinnamon mix makes it crunchy. In the end you get this nice mix of cookie feel and airy cake like bread inside. The cinnamon chips (which are awesome by the way) I have only been able to find at Walmart year-round and at most local grocery stores only around Christmas time...This is a rich, cake like bread - a little slice goes a long way... ~ Enjoy! Ingredients: 3 cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons cinnamon 1 cup butter, softened 2 cup sugar 4 eggs 2 teaspoons vanilla 1 cup sour cream 1 1/2 cup cinnamon chips (one pkg. Hershey's) 2 tablespoons flour 2 tablespoons sugar 2 teaspoons cinnamon Directions: Preheat oven to 350º Spray the bottom two 9x5 loaf pans with cooking spray with flour. (I use "Pam for Baking with Flour") In a medium bowl, whisk together 3 cups flour, baking powder, salt and cinnamon. Set aside. In a large mixing bowl, cream together butter and 2 cups sugar, until fluffy, about two minutes. Add eggs one at a time mixing well after each addition. Add vanilla and sour cream and mix to combine. Add flour mixture and mix just until combine. Do not over mix. Coat the cinnamon chips with 2 tablespoons flour and stir into batter. Spoon batter into greased pans (Don't fill more than 2/3 full.) Combine 2 tablespoons sugar and 2 teaspoons cinnamon and sprinkle over the top of the batter in the pans. (if you do not want a super sugary, crispy crust then reduce the topping mixture in half) Bake for 60-70 minutes until a toothpick inserted into a crack in the center of the loaf comes clean. Remove from oven and let cool 10 minutes before removing from pan. Remove from pan and let cool completely before serving.
